Açaí Sorbet, Cubes or Soft Serve: Which Format Is Right for Your Food Business?

Açaí comes in a few different formats — scoopable sorbets, pure cubes for blending, and soft serve. We also do a pitaya sorbet if you want to expand beyond açaí. Here's how each one works and what it's best suited to.
Scoopable açaí sorbet — best for bowls, scoops, and desserts
Scoopable sorbet is the most common format for food businesses serving açaí bowls. It comes in 5KG tubs — allow it to soften slightly before scooping, then portion it out, add your toppings, and serve.
Corcrá's Traditional Açaí Sorbet is made with 66% organic açaí ingredients, 11g sugar per 100g, and a minimal ingredient list. The texture is dense and consistent. Yield is 25–33 portions per 5KG tub at a standard 150–200g serving size.
Best for: açaí bowl menus, café counters, hotel breakfast service, grab-and-go, dessert menus.
We also offer an Açaí with Guaraná Sorbet in the same 5KG format — the same base with naturally caffeinated guaraná. It suits businesses where the customer profile skews towards gym, fitness, or health-focused use.

Pure açaí cubes — best for smoothies and blended drinks
Corcrá's Pure Açaí Cubes contain two ingredients: organic açaí and water. Zero sugar. They're designed to go straight into a blender.
The cube format makes portioning simple — you measure by the cube rather than scooping from a tub. Consistent yield, consistent flavour, and less waste. For a smoothie or blended açaí bowl, cubes give you the purest açaí base with nothing in the way.
Best for: juice bars, smoothie bars, blended bowls, açaí drinks.

Açaí soft serve — best for high-volume service and dessert stations
Soft serve açaí runs through a standard soft serve machine and outputs consistently at volume — no scooping, no prep between orders, faster service.
Corcrá's Soft Serve Açaí comes in a 20KG format, made from our traditional sorbet recipe reformulated for soft serve machines. 66% organic açaí ingredients, the same flavour profile as the sorbet, with a smooth and consistent texture.
Best for: high-turnover cafés, dessert-focused menus, gyms with grab-and-go service, events catering, anywhere speed of service matters.

Pitaya sorbet — expanding beyond açaí
Pure Pitaya Sorbet (dragon fruit) is built on the same clean, minimal format as the açaí range. Vibrant natural pink colour, fruit-forward flavour, 5KG tub.
It works well layered in a bowl alongside açaí sorbet, as a standalone flavour for customers who want something different, or as a visual contrast on a menu that already runs açaí well.
Best for: operators who want to expand the bowl menu, add colour variety, or offer a non-açaí option without building a completely different product line.

Which format to start with
If you're new to açaí on the menu: start with the Traditional Açaí Sorbet. It's the most versatile format, requires the least equipment, and gives you the clearest picture of how açaí performs for your customers.
If you're already running açaí bowls and want to expand: add the Pitaya Sorbet or Cubes depending on whether your menu is bowl-led or smoothie-led.
If volume and speed are the priority: talk to us about the Soft Serve — it's built for that use case and the economics at volume are strong.
