How to Add Açaí Bowls to Your Café Menu

Can a normal café add açaí bowls without specialist machinery?
Yes, depending on the product format you choose.
With Corcrá Traditional Sorbet, you can build an açaí bowl offering around a commercial freezer, a preparation area and basic weighing and serving utensils. A blender or soft-serve machine is not required.
The starting point is how you want the product to fit your menu and service.
Choose the format that fits your café
Traditional Sorbet is a prepared açaí bowl base that also works in desserts and plated dishes. It suits cafés looking to add bowls without introducing a blending step.
Frozen açaí cubes are an ingredient for smoothies, shakes and custom blended bowls. They suit operators who want to develop the complete recipe and control the other ingredients.
Soft Serve uses a suitable machine to serve açaí in bowls, cups or cones. It can suit higher-volume operations, but needs dedicated equipment, refrigeration, planned preparation and cleaning.
For a café introducing a straightforward bowl menu, Traditional Sorbet is Corcrá’s usual starting point.
Set up a practical serving area
For sorbet bowls, the basic setup includes:
A commercial freezer.
Preparation space.
A scale and suitable scraper or serving utensil.
Bowls and spoons.
Toppings and storage appropriate to those ingredients.
Think about where the bowl will move through preparation, weighing and finishing. The setup needs to fit alongside the drinks and food your team already serves.
Plan portions and preparation together
Corcrá’s operating target is 150 g of sorbet base per bowl, with toppings added separately.
A 5 kg box provides 33 complete 150 g portions in theory, leaving 50 g. For commercial planning, use approximately 30 portions to allow for handling loss and portion variation. Actual results will depend on your operation.
Traditional Sorbet is firm at deep-frozen storage temperature, so preparation belongs in the service plan. Corcrá’s preferred approach is pre-portioning ahead of service rather than relying on immediate scooping from a deeply frozen box.
Agree the handling procedure with Corcrá before launch, including how portions reach serving texture. There is no single published tempering time to apply to every café setup.
Start with a small, clear menu
A small topping selection can support several bowl combinations. Look first at suitable granola, fruit and sauces already used elsewhere on your menu.
Choose combinations your team can reproduce and cost consistently. Each additional topping adds another ingredient to purchase, store and portion, so give it a clear role.
Keep the açaí base visible in the finished bowl. Corcrá’s approach puts açaí flavour at the centre, with toppings completing the dish.
Cost the whole serving
Start with your current box price and a realistic saleable portion allowance. Then add toppings and packaging separately.
The difference between selling price and ingredient cost is not net profit. Labour, waste, VAT treatment and business overheads still need to be considered.
If your menu already centres on smoothies, cubes may be a better fit. If you expect higher volumes and want machine service, discuss Soft Serve before choosing equipment.
