What Is Açaí Sorbet?
Açaí sorbet is a frozen açaí-based product formulated to provide a consistent base for bowls and desserts. It brings açaí together with other ingredients to create the finished flavour and texture.
For a café, the useful distinction is that sorbet is already a prepared base. You can portion it, prepare it for service and finish it with toppings without building a blended recipe from separate ingredients.

What goes into açaí sorbet?
Formulations vary. When comparing products, look at the açaí content alongside the water, sugar or sweetening ingredients, stabilisers, acidity and any additional ingredients such as guaraná.
Corcrá Traditional Sorbet has a recorded formulation of 66% açaí and six ingredients:
Açaí.
Water.
Cane juice.
Pectin.
Xanthan gum.
Citric acid.
The full ingredient list gives more useful information than a broad description such as “premium”. It shows what you are buying and helps you assess how the product fits your menu.
Why do cafés use açaí sorbet?
A prepared sorbet base gives the team a defined starting flavour and formulation. Staff can focus on portioning and finishing the bowl rather than measuring and blending a recipe for each order.
Corcrá Traditional Sorbet needs no blender or specialist açaí machine for bowl service. It can also be used in desserts and plated dishes, giving operators more than one way to use the product.
Preparation still matters. Traditional Sorbet is firm at deep-frozen storage temperature and needs a planned preparation step before serving.
Is açaí sorbet always soft enough to scoop?
No. Serving texture depends on both formulation and temperature.
A product’s scoopability does not, by itself, establish its quality or açaí content. Sugar, solids and stabilisers also influence how a frozen formulation behaves.
When requesting samples, assess flavour and texture alongside the preparation the product needs in your own operation. Avoid choosing solely on how one sample feels at an unknown temperature.
What should buyers compare?
Use the same questions for each product:
What to check | What it helps you understand |
Declared açaí percentage | How much açaí ingredient is included in the formulation |
Full ingredient list | What else contributes to the finished product |
Current nutrition declaration | The product’s stated composition, including total sugars |
Flavour and texture | Whether it suits the bowl or dessert you want to serve |
Preparation and storage instructions | How it fits your team’s working routine |
Portion size and realistic yield | How to plan purchasing and serving costs |
Supply arrangements | Whether ordering and delivery fit your business |
Açaí percentage is one useful part of that assessment. Our article, What Does 66% Açaí Content Actually Mean?, explains what the number tells you and what it cannot tell you alone.
